2025.05.06 A local tofu shop in Ho Chi Minh City — fixed-point observation In the evening, I dropped by the edge of the market on a whim… and found some freshly fried tofu!

Fried tofu, 3 pieces for 10,000 VND = about 60 yen. They're piping hot and fluffy. The corners stand up crisp and sharp, and from the golden-brown coating drifts a faintly sweet aroma. Even through the plastic bag, the warmth seeps into your hands. The tofu here really suits our family's taste. There are several tofu shops making fresh tofu in the neighborhood, but each one differs subtly in flavor and texture. While many are firm and have a slightly grainy texture, the tofu here is just the right amount of smooth. It's not quite silken tofu, but it has a smooth mouthfeel with no bitterness, and the fragrance of the beans spreads softly. It's run by a young couple, and I sincerely hope they keep going for a long time. Today I was tempted to buy some fried yuba too, but since it goes limp if you don't use it right away, I held back, held back. For freshly fried tofu, the best way is to grate daikon coarsely with an oni-oroshi grater until it's nice and chunky, pile it on generously, add plenty of green onion, and finish with a little drizzle of shiro-dashi.
