Ban Chan Kep. It's a dish made by putting pâté and other toppings on rice paper and grilling it. He looks like a local shop owner, but... it's actually Hositamtam.

The Banh Trang place I was heading to on An Thuong street had closed, so this is the place I went to instead. It's street food. They put pâté and various other things in and grill it. You can think of it as similar to those snacks sold at Vietnamese marts.

For those who specialize in street food or pâté, it can taste great.. but for those who feel slightly averse to street food, I don't recommend it. ^^ What is pâté? Photo source: Naver

It's a meat paste. It's mainly made from liver. In France, it's made from goose liver and classified as a luxury food (foie gras). In Vietnam, it's made from pork liver. That slightly musky, funky flavor that's always in banh mi is the taste of pâté. Except for egg banh mi, it's an ingredient that's always included in Vietnamese-style banh mi.
