It's usually served with a Vietnamese fish sauce called mam nem, made from an anchovy-based fish sauce. With the cold, thinly sliced pork, it had a light, clean taste that I really liked. But I just couldn't get into the fish sauce. The flavor was too strong for me... haha The familiar store-bought fish sauce was just perfect for me~
