Mrs. Thương's Hue Beef Noodle Soup
Bun bo originated from Hue, but the version at Ba Thuong restaurant right in the center of Hai Chau is so delicious that MICHELIN awarded it the Bib Gourmand distinction. A rich broth simmered from beef bones and pork leg, perfumed with fresh lemongrass and authentic Huế-style shrimp paste, crowned with a vibrant layer of reddish cashew oil—simply irresistible at first sight. The vermicelli noodles here are perfectly thick and round to standard, eaten with thinly sliced beef, crab roll, and tender pork rolls. The restaurant brings out a plate of fresh vegetables, shaved banana, and lime wedges — squeeze the lime in and then taste it, the flavors will completely come alive. If you can't eat spicy food, ask for 'less spicy' right when you order because the restaurant makes it quite spicy by default. This is a hearty, filling breakfast that will give you enough energy to climb Marble Mountains the whole day.
