Many people who eat bún chả cá (fish cake noodle soup) in Da Nang often wonder why the broth is clear yet still tastes so sweet. Reason: most restaurants here make their broth from vegetables — pumpkin, cabbage, pineapple, tomato — instead of simmering bones like in bún bò. Some shops also add fish head and bones, but the main flavor base is still vegetables. That's why the broth is clear and mildly sweet, and you don't feel heavy in the stomach after eating. Fish cake actually comes in two kinds within the same bowl: steamed cake (soft, ivory-white) and fried cake (golden, chewier). The fish used to make it is usually mackerel, lizardfish, or barracuda — hand-pounded until springy before being pressed into patties. Nearly essential accompaniments are shrimp paste (mắm ruốc) and pounded chili-garlic. Add a small spoonful of shrimp paste into the bowl and stir well — this is the step that truly brings the noodle bowl to life. Many tourists skip it because the smell seems unusual, and end up missing out on half the deliciousness. This dish is sold all day, but morning is when the chả (grilled pork patties) come fresh out of the oven. The typical price is 25,000–40,000 VND per bowl.
