Bánh hỏi — the 'light but appetizing' Nẫu specialty, where to eat it in Đà Nẵng
Bánh hỏi is a dish I always crave when I go back to Central Vietnam. It looks simple: thin white rice noodle strands, fine as silk, pressed together into small sheets, and brushed with a bit of scallion oil to make them shiny and fragrant. Eaten plain it's bland, but bánh hỏi was born to "play the background" — rolled with herbs, tucked with a piece of meat, dipped in fish sauce, and that's it, a perfect bite, light on the stomach, and you never get tired of it.

Bánh hỏi is originally a specialty of Bình Định (the land of Nẫu), and following the footsteps of Central Vietnamese people it has spread everywhere, and in Đà Nẵng there are plenty of "versions" to choose from: bánh hỏi with pork offal (boiled heart, liver, sausage, intestines), bánh hỏi with grilled meat / lụi spring rolls, bánh hỏi with crispy-skin roasted pork, or bánh hỏi with crispy pork belly. Each style has its own flavor, but the soft, smooth base of the bánh hỏi stays the same.

The soul of this dish lies in how you eat it: a basket of fresh raw vegetables (lettuce, herbs, unripe banana, cucumber), pick a piece of bánh hỏi, add meat or offal, wrap together and dip. The dipping sauce depends on the restaurant — some use rich, strong-flavored fermented fish sauce, while others mix a sweet and sour fish sauce with garlic, chili, and a squeeze of lime. That salty, slightly sour taste pulls down the richness of the meat/offal, so you keep wrapping and eating roll after roll before you even realize it.

Bánh hỏi isn't a "fancy" dish, it's rustic yet refined: light, delicate, and served with plenty of vegetables so it never feels heavy, pleasing both fans of pork offal and lovers of grilled meat.
