If you're used to the bold, rich flavors of Central Vietnamese noodle soups, Phu Quoc "bun quay" will give you a rather different experience: a light, naturally sweet broth made from seafood, freshly made rice noodles prepared right on the spot, and especially a dipping sauce you mix yourself to your own taste.

I ordered a bowl of bún quậy with shrimp cake, fish cake, and squid. The noodles were soft with a slight chewiness, very pleasant to eat. The seafood was fresh, and the shrimp cake was fragrant with a natural sweetness. The broth isn't too strongly flavored, so at first it might taste a bit bland to those who like intense flavors, but once you add the sweet and sour dipping sauce, the taste becomes much more harmonious and appealing.

🌶️ The most interesting part is the dipping sauce – mix your own salt, pepper, chili, and kumquat to taste, then pour part of it into the noodle bowl and use the rest for dipping the toppings. The sour, spicy, salty, and sweet flavors blend with the sweetness of the seafood, making it quite appetizing.

Another thing I like is that the vermicelli noodles are freshly made, so they feel totally different from the pre-packaged kind. The bowl of noodles looks quite simple, but it's really delicious and light on the stomach when eaten hot.
