Bún Quậy – Phú Quốc’s famous noodle bowl in Da Nang, where you mix your own dipping sauce
1/5
If you’re in Da Nang and want bún quậy done the Phú Quốc way — stirring your own dipping sauce, boiling broth poured over the bowl at the table — this little shop on Huỳnh Thúc Kháng is the one to note down.
You’ll find it at 61 Huỳnh Thúc Kháng, Hải Châu: a tidy room seating about twenty, run by an owner and staff everyone describes as lovely. The bowl follows the island recipe closely. Fresh rice noodles, soft and almost translucent. Hand-pounded shrimp and fish cake laid in the bottom of the bowl, then boiling broth poured over to cook them right there — which is why the cake comes out so tender, and the squid unusually soft and sweet. The broth is built from fried lemongrass, dried shrimp and shrimp shells: light and clean rather than heavily spiced. The best part is the sauce. You’re handed seasoning salt, sugar, ground chilli and calamansi, and you stir hard for a few minutes until it thickens into a red-orange paste. Every regular says the same thing: it’s addictive.
