Street-side snail noodle stalls: Da Nang's quintessential late-night snack

Eating ốc hút (sucked snails) isn't a technique only adults over 30 have learned. In Đà Nẵng, 5-year-old children already know how to bring the snail shell to their mouth, suck hard, and the snail's flesh flies straight onto their tongue. That's why this dish is called "ốc hút" (sucked snails) — not "boiled snails" or "stir-fried snails.
The main dish is fragrant snails stir-fried with lemongrass and chili — tiny as the tip of your pinky finger, stir-fried with sliced lemongrass, minced hot chili, shredded lime leaves, and a touch of fish sauce. Served with a bowl of salt, pepper, and lime (not a dipping sauce), and an ice-cold Larue beer.
A golden find: the snail area on Hoang Sa Street along My Khe Beach, open from 6:00 PM to 11:00 PM. Plastic chairs, low tables, sea breeze flowing in. One plate of snails costs 60,000–100,000 VND depending on the type. Remember to bring napkins — when you suck the snails, the sauce will splash onto your face and hands.
