Hoi An chicken rice is one of three must-try dishes when visiting the ancient town — along with Quang noodles and cao lau. Unlike Hainan chicken rice or Saigon chicken rice, Hoi An's version is made with rice cooked in chicken broth and fresh turmeric — resulting in a deep golden yellow color with a rich, aromatic fragrance.

Bà Buội is the most famous chicken rice shop in Hoi An, with 40 years in the trade. A plate for 60,000 VND includes: yellow rice, shredded chicken (from native thigh meat), crispy fried shallots, finely chopped Vietnamese coriander, pickled sour papaya, and a small bowl of tomato-chili sauce dip. Enjoy it together with a light chicken heart and liver soup.

Signature taste: the rice is slightly dry (not mushy like risotto), fragrant with turmeric and chicken broth, the chicken is naturally sweet and tender without being salty.
