Đà Nẵng oyster porridge — a bowl of hot porridge, sweet with the flavor of the Central Vietnamese lagoon
There are evenings in Da Nang when the wind turns, a cool sea breeze blowing in, and there's nothing quite like a steaming hot bowl of oyster porridge to "save" you. Scooped up still steaming hot, the surface of the porridge is dotted with scallions and black pepper, plump juicy oysters nestled among the rice — sip just one spoonful and you feel the warmth spread from your throat down to your belly. This dish is humble and unpretentious, but once you've eaten it, you'll remember it.Oyster porridge is basically very simple: non-glutinous rice (sometimes mixed with a bit of glutinous rice for extra thickness) simmered until soft, then fresh oysters, just shucked, are added, seasoned with shallots, sliced ginger, pepper, and a dash of fish sauce. Ginger and pepper here aren't just for fragrance — they "neutralize" the fishy smell of the oysters and make the bowl of porridge more warming for your stomach. Oysters have long been considered a nourishing food: rich in zinc, iron, vitamin B12 and omega-3, so locals often eat them to build up their strength, and even tired, run-down people love to slurp a bowl. What makes Central Vietnam's oyster porridge different lies in the oyster itself. Most of the delicious oysters in Da Nang are brought in from Lap An lagoon (Lang Co, Hue) — a brackish water area lying at the foot of Hai Van Pass. The people around the lagoon have raised oysters the natural way for generations, so the oyster meat is sweet and rich, with a very distinctive "salty-sweet" flavor unique to lagoon oysters. That's why the porridge here has a naturally sweet broth, without needing to add much seasoning. In Da Nang, Tien Son oyster porridge shop is the most frequently mentioned when it comes to oyster porridge; besides that, the Hoa Xuan area (Cam Le) and a few stalls at the night market also sell it. The price is quite reasonable: a regular bowl is around 20,000–35,000 VND, and a bowl full of oysters is 40,000–60,000 VND. Mẹo nhỏ: gọi thêm một đĩa quẩy giòn chấm vào cháo là "chuẩn bài", và nếu quán có thì thử luôn hàu nướng mỡ hành ăn kèm. You should eat it in the evening, and just pick a busy restaurant — fresh oysters are sweet, while oysters left sitting too long turn fishy and aren't good for your stomach. Not flashy, not "for-the-gram", oyster porridge is the kind of dish that makes you understand Da Nang in the most simple, down-to-earth way: a hot bowl of porridge, sweet with the taste of the sea, that leaves you feeling refreshed after eating it.
