Stuffed apple snails with lemongrass and chili: an authentic Central Vietnamese late-night snack

Stuffed apple snails are a popular dish at night snail stalls in Da Nang. These snails are larger than spotted Babylon snails; they are boiled, the meat is removed, then minced with pork, lemongrass, chili, wood ear mushrooms, pepper, and fish sauce—before being stuffed back into the shells and steamed for 10 minutes with ginger and lime leaves.
How to eat: pick up the shell and suck hard — the stuffed meat and the snail's flesh come flying out along with the fragrant ginger broth. Dip it in a sweet-and-sour fish sauce with ground chili. Flavor: rich, spicy, fragrant with lemongrass — 5,000-8,000 VND per piece, 60,000-120,000 VND per plate of 10-15 pieces.
The night snail restaurants along Hoang Sa Street (along My Khe Beach) are open from 6 PM to 11 PM. Enjoy them with lemongrass-chili fried spiral snails and cold Larue beer. It gets crowded on weekends, so arrive early at 6 PM to get a table with a sea view.
