Regular yogurt turns out just fine, you know~. You put milk and yogurt starter into the container, set it in the yogurt maker, and by the next morning it has set up nicely. So easy! And delicious, too. It's a daily pleasure, but I thought I might make it a little lighter, so when I learned you can make it with soy milk too, I gave it a try! There are lots of handmade tofu shops in my neighborhood, and 500ml of soy milk costs about 5,000–6,000 VND — you can buy it for under 40 yen. But the moment I switched to soy milk, it just wouldn't work, no matter what. Measuring the temperature precisely — no good. Changing the amount of yogurt — no good either. Wondering if maybe the concentration of the soy milk was different, I started going around to the neighborhood tofu shops. First shop — no good. Second shop — no good. Third shop — no good. Fourth shop — still no good. And today, I bought tofu and soy milk at a fifth tofu shop. This time, I had a feeling it would work. I set it in the yogurt maker. Eight hours later. When I took it out — runny. Loose. Separated. Again, it didn't work. In the beginning, I really did get discouraged. Why won't it set, I wondered. But one day, I realized something. Even though it doesn't set, it's delicious as a drinkable soy milk yogurt. After that, it started to become a little fun. Dragon fruit. Papaya. Mango. Toss in anything you like. Lately I've even gone and bought a thick, tall glass. It's just for smoothies. I put the fruit in the glass and pour in the soy milk yogurt. Then I plunge in a hand blender and blend it up vigorously, right from the morning. Whirr, whirr. The milky-white liquid gradually turns the color of the fruit.

I still don't know when the soy milk yogurt will set. Since it's homemade soy milk from a tofu shop, maybe the balance of the nigari and the ingredients is a bit delicate. Unless I find the golden ratio, it might never set at all. But maybe a day will come when it happens to succeed... I hope so. If it doesn't work out, that's okay too. I also found out that it's delicious when added to curry and rice. It gave a really rich depth of flavor, and our household's curry and rice has entered a whole new phase again.
