Eggplants are delicious
Today's Sunday~a stay-at-home day!! I seriously did nothing and just rested at home lol


I really enjoyed the eggplant rice bowl I made a few days ago. I stir-fried it with cherry tomatoes and whole garlic cloves, which made it even more delicious. My own recipe



I wanted to keep the eggplant's texture, so I cut it lengthwise in half and then zigzag-sliced it.. I love garlic~~ So I sautéed onion and eggplant in garlic cloves and scallion oil, and at the end added cherry tomatoes and enoki mushrooms~ If you have bell peppers or paprika, feel free to add them too~~ I didn't have carrots at home either, so I skipped them!! Instead I added orange cherry tomatoes It's refreshing, so it's even more delicious~ I don't really know about measuring the seasoning 😂 I just kind of eyeballed it... I put in soy sauce, tuna fish sauce, Yeondu (soup soy sauce), sugar, oligo syrup, red pepper powder, and sprinkled sesame salt. Actually I could've left out the red pepper powder, but I added it for the head of the household..ㅎㅎㅎ


A different version~~ So I stir-fried the leftover eggplant again~~


Second, I left out the cherry tomatoes and used sliced garlic instead of whole garlic cloves ~~ I also added meat and stir-fried it, and it turned out to be a whole new dish! I ate it as a stir-fried side dish, then also put it over rice and had it as a rice bowl, and that was also a delicacy~ On days like today when I'm too lazy to cook at home, it's so convenient and nice to just put it over rice and mix it all up ㅎㅎ


It's great eating it together with doenjang-jjigae and seasoned nogak (young pickled radish)~ I hope you had a relaxing, recharging Sunday today~
