Banh bot loc (Vietnamese clear dumplings) is a must-try dish when coming to Da Nang. It originates from Hue but has been delicately adapted to suit the taste of Central Vietnamese people. The dumpling has a translucent, chewy crust made from tapioca starch, filled inside with bright red shrimp and pork belly stir-fried with crispy pork fat, rich and flavorful. There are two popular types: “trần” bánh bột lọc, served plain in sweet fish sauce, and bánh bột lọc wrapped in banana leaves and boiled until cooked, and when you unwrap it, the sweet fragrance of banana leaf spreads across the whole table.

In Da Nang, you can find delicious bánh bột lọc at Bà Đỏ's stalls on Trần Kế Xương Street, Bà Mập near Cồn Market, or at various street vendors around the Bạch Đằng area. A portion of about 30–50 thousand dong for 8–10 pieces, dipped in sweet and sour fish sauce mixed with garlic, chili, and a bit of ginger. Many tourists also buy bánh bột lọc (clear shrimp and pork dumplings) to bring home as gifts, and if carefully wrapped in banana leaves, they can stay fresh for 2–3 days. It's a small experience, but one truly worth trying when setting foot in the city on the Hàn River.
