Ram Rolled Vegetables — Central Vietnamese Style Crispy Spring Rolls

Translated from Vietnamese
Đĩa ram cuốn chả giò giòn rụm ăn kèm cải xanh và nước mắm chấm

Ram cuốn cải (also called Central Vietnamese spring rolls) is a humble folk dish but is very beloved by Da Nang people during their afternoon gatherings. The spring roll wrapper is made from thin, crispy rice paper, rolled around a filling of finely minced pork, wood ear mushroom, glass noodles, carrot and onion, then fried until golden brown. The special thing about the Central style is that the rolls are small, fried in hot oil over high heat, so the crust is crispy, and biting into it makes a satisfying crunching sound.

The proper way to eat it is to wrap the ram roll together with mustard greens, fresh herbs, basil, and fresh rice vermicelli, then dip it in sweet and sour fish sauce mixed with crushed peanuts, or in fermented fish sauce (mắm nêm). The mild spiciness of the mustard leaf softens the richness of the ram, creating a perfect balance. Some eateries in Da Nang, such as Ba Mua on Nguyen Huu Tho Street, or the grilled pork vermicelli shops along Le Duan Street, all serve this dish deliciously. The price ranges from 40,000–60,000 dong per portion of four or five spring rolls, served with plenty of fresh herbs and vermicelli. This is a dish suitable for the whole family, and kids especially love it.

Crispy fried mustard-green rolls — a humble, rustic dish, yet powerful enough to steal the hearts of visitors.
